
I’m all about learning something new – and here we go again. I can only pray it’s better than the Garlic Knots I tried last week, hahaha. Deep down inside I do like zucchini, but I don’t tell anyone. I like them on salads, roasted with a mixture of veggies and now it’s time to try them a new way… with chocolate.
I followed Two Peas & Their Pod Chocolate Zucchini Bread by Maria Lichty, it looked simple enough and it was for one loaf, where a lot of recipes were designed with 2 loafs in mind. If this was not a success, I didn’t want to over feed our wild life with more disasters.
After pulling all the ingredients, measured them out – read the instructions a half a million times…I was impatient waiting for the timer to go off telling me it was done. After testing it with a toothpick, I decided to give it a couple more minutes. That turned out to be a good idea, it was perfect. Now wait.
Let me tell you, this did not taste like zucchini, bread or cake. It was like it took on it’s own blend of cake & chocolate fudge brownie. One full slice would be absolutely too rich for my blood. Maybe add a dollop of whip cream or a scoop of ice cream. That would make a great dessert.
