Buckwheat Bread

Grocery store visits are when I’m in dire need of creating a meal plan for the week. First on the list is the meat department with produce immediately after. I always forget about the bread.

Standing at the register I glace over all the magazines and review all the latest gossip articles till I found the one that said “Homemade Bread” by Bread Baking Made Easy. The front cover even said “It’s easier than you think!” Well… that does it, I’m getting a book full of instructions on how to make easy bread. My meal planning is now complete.

After spending a few days drooling over the majority of the photos and glancing through the ingredients, I decided on “Bountiful Buckwheat Bread.” My mind immediately went to flax seed. Why? I don’t know. But what is buckwheat anyway? The article says it’s not actually any form of wheat but a pseudo-cereal that ‘closely related to rhubarb and sorrel’ the article said. Hmmmm? I don’t like rhubarb, but I’ll give this a try anyway.

On a different visit to the grocery store, I pick up a small package of buckwheat flour, with the idea of let’s make a day of it. There’s snow on the ground, can’t go anywhere, why not heat up the kitchen with a loaf of fresh bread. Yuummm

Mix all ingredients

Everything starts out great until I hit step 4 where it says once all the ingredients are in the bowl – the dough will be slightly sticky – but I don’t have anything close to resembling dough. It looks like thick flax seed pancake mix. Oh crap, now what? This isn’t working. I add more flour, 1 heaping tablespoon. Then another and another until I lose count of how many I added.

On step 6, I need to grease a bowl, place dough inside and let it rise for about an hour. I’m faking it at this point. But I follow the instructions and hold my breath and wait an hour. It gets dumped into a creased loaf pan and slid into the oven where I did a little prayer that it will resemble something like a loaf of bread an hour later.

I was extremely surprised when this wonderful smell came drifting out of the oven just before the timer went off. Once it was pulled out and sat on the counter, it looked like it was as hard as a brick, but cutting into it – the inside was so soft and moist, just like it was supposed to.

It was difficult to wait any longer, I just had to taste it. My hubby summed it up pretty good – “It taste like it’s good for you!” Hahahaha

In the end, I’m glad I made it. I’m sure some folks would love it, it’s just not my cup of tea.

Blackberry Galette

There was a time back when Olive Garden used to sell, in the summer months, a berry tart that came as a single serving (but could be shared if need be) multi-berry in a crust with ice cream dessert that I just loved. But they stopped.

Now, years later, I discovered it was really called a Galette and the size didn’t really matter. What did matter – it was a baked pastry filled with fruit surrounded by a crust – all cooked to perfection. Topped with a ice cream that melted into it filling your mouth with an ecstasy of flavors – the sweetness of the berries or fruit, the crunch of the golden crust and the coolness of the ice cream all blended together on your tongue.

Today was my first time making an attempt to create this wonderful dish I had in a memory. I will say that the above picture was immediately after they came out of the oven. Oh boy, as much as I fretted over doing this, they came out perfect.

I had made several searches with several different berries and fruit samples and after visiting the market, the blackberries looked the most inviting. I had picked up 3 small containers, not knowing exactly how much each contained. I soon discovered each container held 1-cup of berries each. After reviewing each recipe, the one chosen for today was Platings + Parings, easy recipes + what to pair with them!

The recipe is described as “This rustic Blackberry Galette is quick and easy dessert recipe that can be assembled in just 10 minutes using store-bought, refrigerated pie crust.” They were correct in all aspects. And it turned out great.

Will I do it again? Yes!!! We’re now in discussion of what other berries and/or fruit to try next – or even a mix berry blend. Hmmmm? That does sound yummy!!

Bali or Bust

I would consider myself a seasoned well-traveled traveler. Recently I had read the difference between travel and journey was: Travel is to a destination and Journey is an Experience… or something like that. The other day while pondering all the countries I’ve visited, traveled/journeyed through or lived in – I’m an accidental wanderer. Numerous times there’s been a friend who would call up and say “Do you want to go to _______?” Sure!!! Or “Is your passport current?” Yep!!! And off we’d go.

Now, my bones hurt and muscles don’t want to move and I feel every bit of the 70 years I’ve been on this planet – all while my mind still believes it’s around 35 years old, the winds will be taking me to Bali. Why Bali of all places? It’s the Elephants. What’s not to love about these grand creatures? I’m betting if you don’t already know about them – you either don’t care or you’ll spend the time to do some research, that’s not the reason for this blog post. The real reason for this post is because there’s a lot of information out there now when considering an international trip… and my hand was hurting from writing and I was running out of paper. 😉 Oh, by the way – there’s a stop in Istanbul, Turkey (going and coming) and another pitstop in Australia (why – because I haven’t been there and I need a boomerang). So, let’s get to business:

The core of this trip is through Craftours: 9-Day Bali – our plan is to add a few days in Bali and somewhere in there fly down to Australia for a couple three days. (Note: Craftours.com is a great touring company that really takes care of their travelers – every step of the way.)

Things we want to do while we’re away: (While putting this all together, I’m now wondering if we’ll have to extend out visits.)

  • Bali: In addition to what our tour provides, we’re planning on visiting Mason Elephant Park & Lodge, Taro-Bali, how exciting will it be to bath and have breakfast with the elephants? To partake in helicopter rides, white water rafting, ride around in jungle buggies and dive into a chocolate experience. But don’t forget to check out the 18 Expert Tips on arrival at Bali – Secrets to know. There’s also the Finns, World’s Best Beach Club with a ton of opportunities to explore Bali to get the most of what you can – especially if you’re young.
  • Turkey: We will have 8+ hours of layover time while in Istanbul, Turkey. Did you know they have city tours established for those that have extra long layovers? Plus the airport has a locker system that will allow you to lock up your suitcases while you tour the city. We plan on visiting the Grand Bazaar in Istanbul, open 8:30am – 7:00pm, 61 covered streets, 4,000 shops and is considered the 1st shopping mall of the world!!!
  • Australia: Perth: Avon Valley Hot Air Balloon Flight with Breakfast;

Planning this magnificent trip… things to consider:

  • Airlines: Do we need physical tickets, email confirmations, apps on our phone, what? Which ever the case make sure you have everything you need before setting off. This trip will include the following airlines – American Airlines, Turkish Airlines, oops, I’ve forgotten the 3rd one. Need to check on that!
  • Visa: Each country we’re going through (my daughter and I are making this trip) clearly states that if you’re leaving the airport, you’ll need a Visa. Some visas can be purchased at the airport and some are needed before you leave. So far, it looks like Turkey and Australia can be purchased for about $25 each at the airport. Check out VisaGuide.world – you/we may be able to get one Visa for Multiple Countries. In the past we’ve used PickVisa.com and everything was perfect. May do that again.
  • ETA (Electronic Travel Authority) – It seems this is what you can do if you plan on visiting the same country several times within a certain time period. I do know that we’ll be going to Bali, then leaving for Australia, then return to Bali before ending our vacation there. Do we qualify? Not sure yet.
  • Hotel Reservations: We have established hotels through the tour group we’re joining in Bali…our 1st hotel is: Komaneka Resort in Monkey Forest. Then our second hotel is: The Mulia, Mulia Resort & Villas. So far, while we’re in Perth Australia, we’ll be staying at the Holiday Inn Perth City Centre enabling us to be center of all the action. Of course if our plans change, then so does the hotel. Note: It’s imperative to know which hotel you’re traveling to, if not within a tour group, so you can either hail a taxi or schedule a pick-up.
  • AAA International Drivers License: The reason this is considered is because if we decide to rent scooters in Bali or a car in Australia, at least one of us will require some form of international driving permit. AAA will help you out with 2 passport photos, an application, valid drivers license and $20.
  • Passport and other required documents: American Express had a commercial that never leave home without it, but I say never leave home without your passport!!! When/while traveling ensure you have a copy of the important parts of your passport included in all your luggage, your wallet/purse and leave a copy with whomever is left behind. It makes it much easier for your luggage to find its owner if baggage claim can figure out who owns it. It would also be a good idea to put a copy of your itinerary with a copy of your passport.
    • Vaccinations: Since Covid, there are many travel restrictions that were put into place – countries wanting verification that incoming individuals had all their shots or proof to be Covid free before entering. Check each country you plan on visiting to ensure you have all the right additional documents before arriving at their entry point.
    • U.S. State Department: There’s a program now called Smart Traveler Enrollment Program (STEP) allowing you to let the US government know where you’re going, when will you be there, etc. so if there’s anything that you need to be warned about (weather, riots, anything disruptive) and you have to be evacuated or replaced, they’ll be able to notify you and help you transit out.
    • Before you Pack: Review any precautions for all the countries you’ll be visiting. For example: I’ve been reviewing a lot of “Things I wished I knew before I went” articles and videos. These are really valuable – watch or read more than one. See what items are mentioned by everyone or just a single person. I had never heard of Bali Belly before, have you? Now that I’ve read these articles, it’s the same precautions as going to Egypt. (If you get plugged up and can’t release it, have a salad – those little parasites will clean you out fast, with a lot of discomfort.)
  • Dining Etiquette: The last thing you want to do in a foreign country is draw more attention to yourself than necessary… and ignoring their customs and eating habits are two ways you do not want to be noticed for. Simply put, you could find yourself in jail if you do. So read up and pay attention. Some countries require tips, some don’t. Some eat with utensils, chopstick or fingers… which is which?   • Cultural Etiquette & Customs: Did you know that crossing your legs could get you into trouble? No? There are several things you do not want to do to that would be considered obnoxious behavior and upset your guests. Shake hands with the wrong hand, sit wrong, hand gestures, body language, voice volume, etc. can all be considered obnoxious in other places but not others. Know the difference. How to be a good tourist.
  • Travel Insurance. Insurance is something most people don’t think of, I never did until I decided to let a tour group handle everything… which included insurance. You never want to be stuck because something happened to your flight or other transportation, your health, lost luggage, hotel reservations, etc. Do your research and think about all the things that could go wrong… let’s hope that you don’t need insurance, but if you don’t have it – how much will it cost you to fix your situation? Shop around and find what best suits you and what you’re planning on doing and going.
  • Money/Cash: Let’s not forget about the funds required to do everything you want to do. While you may say it was cheaper back in the 70s, I didn’t make enough money to visit anywhere back then unless it was through my job. But thinking about the here and now… I really want to enjoy myself and would love to have a couple three souvenirs to remind myself of how wonderful the trip was, I don’t want to break the bank in doing so. Therefore, what’s more important? Experience or stuff???? Plan and pay for as much experience as possible before we leave, have one credit card available for hotels and travel agencies and cash for tips, vendors and small trinkets. Which reminds me: Make sure you notify your banking institution that you’re going out of country. You don’t want to get there and attempt to make a purchase only to find out they think your card has been stolen and has been cut off. It’s always best to get a bit of cash for each country before you leave and do all your exchanges at a bank, ATM or your hotel (hotels charge more for exchanges).
  • Packing List/Travel Essentials: Now that you know where you’re going, what you’re doing while you’re there and where you’re staying…it makes it easier to decide on what you need to take and what can be left behind. Think about the country you’re traveling to and if you forgot something, can you get it there – or do you need it at all? But to help get you started, let’s think about your Carry-On bag, the one thing that you will have with you if your checked-in luggage gets lost. A bag that has all your entertainment, personal documents, medications, water purifying bottle, essentially everything you will need to have on you if your other luggage is never found in time. Are Your Dreams Coming True?

Every now and then I sit back, take in a few deep breaths and ponder on how I got here. What were my dreams when I first started dreaming of what I wanted my life to be like, to look like. My desires of life and what I wanted to do didn’t take place until I was in high school. I wanted to travel the world. To see other countries, experience their customs, and understand their culture. (Photo came from “A Lucid Dreamer’s Journey“) I started thinking of the song “Taxi” by Harry Chapin and probably what the songwriter was thinking while they wrote the song.

The world was a much different place in the late 60’s and 70s. Generations were busting out of their shell, seeking a freer lifestyle, breaking away from the ridged form of following the father’s footsteps or putting on a suit and grinding away at the office all day. People, young people, had ideas popping in their heads that there had to be more to life than going to work, coming home then do it all over again – day after day, week after week, year after year – only to die and have no meaning on that small dash on their tombstone between the years of birth and death.

Vietnam was going on, protesters with sit-ins, marches, songs and poetry, all across the nation showing their disapproval of fighting for a country that’s not ours, putting our young boys in danger for what? Now, we’re here in a world I barely recognize. I’m sure our parent’s generation couldn’t believe what was happening back then – young people not doing as they were told, setting off to do their own thing, ignoring the riggers of laws and government, shredding our old customs – wanting a new way of life. A life that would be worth enjoying. A life where there was peace all across the lands. A rejoice, one voice that stood out from country to country that brought about no war, no poverty, no hardships. In reality, that could never happen as long as there were greedy people, those that wanted to control, those that wanted other do do their dirty work, those that thought they were better than everyone else.

So… here I am again, pondering on how I got here. What were my dreams when I was younger? What did I want to do with my life? Now that I’m 70 years old with aches and pains that I had never thought I’d have – wondering, pondering – have I succeeded? Have I accomplished what I wanted all those years ago? Have I been happy?

Chocolate Zucchini Bread

I’m all about learning something new – and here we go again. I can only pray it’s better than the Garlic Knots I tried last week, hahaha. Deep down inside I do like zucchini, but I don’t tell anyone. I like them on salads, roasted with a mixture of veggies and now it’s time to try them a new way… with chocolate.

I followed Two Peas & Their Pod Chocolate Zucchini Bread by Maria Lichty, it looked simple enough and it was for one loaf, where a lot of recipes were designed with 2 loafs in mind. If this was not a success, I didn’t want to over feed our wild life with more disasters.

After pulling all the ingredients, measured them out – read the instructions a half a million times…I was impatient waiting for the timer to go off telling me it was done. After testing it with a toothpick, I decided to give it a couple more minutes. That turned out to be a good idea, it was perfect. Now wait.

Let me tell you, this did not taste like zucchini, bread or cake. It was like it took on it’s own blend of cake & chocolate fudge brownie. One full slice would be absolutely too rich for my blood. Maybe add a dollop of whip cream or a scoop of ice cream. That would make a great dessert.

Garlic Knots

Who doesn’t love a good Garlic Knot? Crispy outside, soft inside, filled with a bread telling you how to weave garlic and butter together – only to have it melt in your mouth. Oh man, I was feeling it. A deep desire that I could smell, even before I started.

I found this easy recipe on Sally’s Baking Recipes page, photo above is from her page, the recipe seemed simple enough for a person who’s never made these before, so off I went – ensured I had all the ingredients, clean counter, all the utensils, printed the recipe, etc… ready to create.

Well, the first batch didn’t even make the dough – pour that out. Take a few deep breaths, let’s try again, maybe I had forgotten something. Well, this time I had dough. It took on a life of its own, exactly as the directions predicted. Sally even provides videos and strongly suggests you do a review. I did that. I would start the video, play it till she stopped – then I would follow her lead. Step by step. Well, I did something wrong.

They came out harder than a hockey puck. So the cat had a treat – something new to chase across the floor.

I will admit they smelt great. After reverifying that I had used all the right ingredients, did each step correctly, I think what I did wrong was kneading the dough too long in the mixer. In her video, she removed the dough from the mixing bowl and kneaded it herself, whereas I used the mixer to do that. I will try to make these again, only this time I will follow her video exactly as she so proudly presented.

Focaccia Bread

As my 1st project on creating Somethin’ New, my daughter suggested I make Focaccia Bread. Never heard of it. But after analyzing the making process…it’s a go.

Found a recipe on AlexandraCooks.com called “The Best, Easiest Focaccia Bread Recipe” – total time: 18 hrs, 30 min; making 2 loaves or just 1 if you use a large baking pan, and it looks like the options are endless on what to add to the bread and how to use it. Some people use it as the crust for pizza, cut it up as bread for sandwiches or even just for dipping.

I chose the 9×13 baking pan and the results were simply amazing. I really enjoyed making this bread. Put it all together in the evening, stick it in the fridge over night, take it out the next morning – put it in a pan, let it sit for another 4 hours… put herbs & spices on top, I added a few cherry tomatoes and baked for 30 min. Now you’ll be asking, am I going to do this again? I doubt it – why? Because I’m looking at making different things – Somethin’ New on a regular basis, not discover something to make all the time.

The recipe says it’s good in an airtight bag or vessel for 3 days or freeze it for up to 3 months. The bread was good – crunchy on the outside, soft inside – fresh, but after being stored for a day, it became soft through and through. Personally, I liked the crunch sound. So, I’ll reheat it at 350 degrees for 15 min next time.

Over Due Vacation

We go through the motions every day, every week, every month till the year has run out.  So many times I hear people say — I just can get anything accomplished – or – Different week, same stuff.  Both sound like dead end something’s.

If you’re working on a task or project and just seems like your spinning your wheels and not accomplishing anything, you’re right.  Or if your work just seems to pile up, day after day, and there’s no end in site…something needs an adjustment.  Is it you or your work?

We ignore ourselves in order to make room for other things and people.  The question is: Is it or are they worth it?  Time is extremely valuable and time spent on ourselves, in my book, is even more valuable.  I’m extremely guilty of spending more time on everyone else and other things, simply because I get lost in the moment and believe something else is more valuable than time spent on me.

Well…for the past two weeks, I didn’t do that.  First I spent a day at the spa — all day for a head to toe treatment of “Ahhhh” then off I went with a friend to see “what’s happening” in the Northeastern states.  No, the leaves weren’t changing colors yet, but we did discover great Maine lobster, sailed, shopped antiques, ate all kinds of foods, walked up and down quaint villages and met some wonderful people.

Each evening we would return to our room with a sense of “Wow, what a great day” type of feeling.   I had every intention of writing in my journal of all the things we accomplished, saw or experienced and mention all the great and wonderful people we met, but I was so exhausted that as soon as I sat on an overstuffed mattress fluffed with a duvet cover — the sand man would take over and sleep would over come me.

Now that I’m home again, I can’t believe I waited so long for this over due vacation.  So many times over the past few years, vacations meant I met up with family for funerals, reunions or putting out fires.  Now that I have reset my definition back to what a vacation really is…I’m making plans for next year.

While it’s important to take care of those you love and pay attention to things required to make our lives affordable — we can’t lose site of what matters most – and that’s our own minds & bodies.  Because without a strong  mind and healthy body, we can’t help others.

What Happened to Time?

Recently I attended the funeral of a Wonderful family member.  Even though the event was a sad one, you had to rejoice to the life she led.

In her eulogy, you didn’t hear about how many hours she spent on-line doing searches, reading emails, posting to Facebook or playing make-believe that she knew everyone online.

Instead, you heard about how friends and family were always welcomed at her door, the open gatherings to play cards, dominos, eat, drink and be merry.  How she was always laughing and willing to spend time with others.

I remember when it only took 3 minutes to go through the daily mail and 15 to pay bills.  Now, it can take over an hour to sort through what comes through our postal service and email.  And phone calls really don’t seem to be from anyone I know…unless you want to count the same telemarketers and fund-raising committees that refuse to discard my number.

Recently I read an article telling you how to be happy…they said you have to get out, be with people, do something – anything but sit at home.  Let me add “get off the computer or cell phone” – pay attention to the people around you.  More importantly, pay attention to yourself.  If you can make yourself happy by doing things you love, it will inspire those around you and make them happy!

trying to read all my emails, postal deliveries marked “occupant,” and the never-ending demands of our cat.  I vow here and now to ignore all mail deliveries that do not pertain to me or interfere with something more meaningful. 

The cat?  Well, I’m sure he won’t listen to me when I say I have something more pressing to do.  After all – he believes he is the Master and I am the servant!

The moto?  Make life enjoyable!  Do something exciting, visit with friends and family – if not in person, give them a call!!  I’m sure they would love to hear from you!!!

Resolution or Bucket List?

By now you’ve figured out whether or not you’re part of the 8% that’s keeping your New Year’s Resolution or you were too crazy to make that list in the first place.

What’s on Your Bucket List?

Maybe you’re working on your Annual Bucket List!  That seems to be the new thing now!!  Why create a list of things you’re not going to accomplish anyway…just create a list of  things you want to do throughout the year.  Places you want to go, people you want to spend more time with or things you want to learn and/or fulfill throughout the year.

Life changes…takes dedication, commitment!!

It’s easy to say “I’ll eat earlier…no more late night snacks” plus “I’ll get a better night’s sleep” — that is till you forget what time it is…you’re reading a book, relaxing, watching TV, it’s late…you’re watching a live television show and can’t fast forward through those food commercials that are now speaking directly to your belly.  Now, you’re hearing the rumbles coming up from your soul — directing you to the frig, the pantry, the hidden stash of sweets — anything to keep it quiet!!  “What was that?”  You started your diet yesterday?

If you’re doing Life Changes, you have to:

  • Consider everyone living in the house — If you’re not the only one, not everyone will be “loving” you by week two!  Unless they’re as committed as you are.  Or eating somewhere else when you’re not around. 😉
  • Create a reasonable time period of accomplishment — for Goal Setting purposes.  Be realistic.  Try not setting a goal to lose a specific amount of weight.  Eat a certain way, for the rest of your life and stick with it.
  • Decide to become active or more active.  If you just love all those late night TV shows…record them.  Then watch them on your terms — at an earlier hour, breeze through the food commercials, or watch them through lunch.
  • Decide what you want to do…and schedule it.  Make it happen!!  You’ll be surprised at how good you’ll feel doing something you’ve wanted to do with someone special (even if that special someone is yourself)!!
  • It doesn’t matter where you live…there’s a lot to do!!  Check your paper, go on-line, talk to the people in the know…discover something new around you!!
