Focaccia Bread

As my 1st project on creating Somethin’ New, my daughter suggested I make Focaccia Bread. Never heard of it. But after analyzing the making process…it’s a go.

Found a recipe on AlexandraCooks.com called “The Best, Easiest Focaccia Bread Recipe” – total time: 18 hrs, 30 min; making 2 loaves or just 1 if you use a large baking pan, and it looks like the options are endless on what to add to the bread and how to use it. Some people use it as the crust for pizza, cut it up as bread for sandwiches or even just for dipping.

I chose the 9×13 baking pan and the results were simply amazing. I really enjoyed making this bread. Put it all together in the evening, stick it in the fridge over night, take it out the next morning – put it in a pan, let it sit for another 4 hours… put herbs & spices on top, I added a few cherry tomatoes and baked for 30 min. Now you’ll be asking, am I going to do this again? I doubt it – why? Because I’m looking at making different things – Somethin’ New on a regular basis, not discover something to make all the time.

The recipe says it’s good in an airtight bag or vessel for 3 days or freeze it for up to 3 months. The bread was good – crunchy on the outside, soft inside – fresh, but after being stored for a day, it became soft through and through. Personally, I liked the crunch sound. So, I’ll reheat it at 350 degrees for 15 min next time.
